Summit Recipe Guidelines
At summit, we take pride in sourcing the right coffee for each and every one of our customers. We have a selection of roasted coffees from all corners of the world from light roasts, to dark roasts.
Each unique coffee roast we have is perfectly suited for traditional espresso machines and each produces delicious coffees. To help achieve the best quality from your chosen coffee roast, here are some recipe guidelines, from Summit’s tasting professionals, to follow:
Recipe guidelines
What does the recipe mean?
Dose Size – The dose size is the amount of dry coffee ground into the basket. We recommend not to fill the basket any more than 2cm from the top once tamped. Most double shot baskets can hold between 16-20 grams of coffee.
Extraction Time – The extraction time is how long it takes for the coffee shot to come out from start to finish. Extraction time for a double shot of coffee should typically take between 25 and 32 seconds.
Espresso Weight – Espresso weight (or yield) is how much the final weight of the espresso is once it has finished extracting. For a double shot, the weight should be between twice and three times the weight of the dry ground dose size. Any less and the espresso will be sour, any more and the espresso will be bitter.
Grande Crema
Our classic, our consistent, highly sought after blend of coffee is a mix from regions of Brazil and Vietnam offering a full-bodied and balanced flavour. With hints of nutty hazelnut and rounded with a sweet caramel finish, Grande Crema is a go-to for most coffee brewing needs.
Grande crema can be described as a medium-dark roast with naturally sweet aromas and a smooth mouthfeel throughout drinking.

Twenty Two Peaks
A blend from two varieties of arabica coffee, twenty two peaks is a balanced harmony of flavours.
When brewed, twenty two peaks offers a smooth caramel body, characteristic of Brazil and a more nuttier flavour from Colombia.
This lighter roasted blend of arabica allows for a more delicate palette to enjoy any espresso based drink. Following a light roast profile further allows for a brighter, citrus finish to complete the flavourful ensemble.

100% Arabica
Our all natural 100% arabica is sourced from regions in Brazil and Colombia. An all-round smooth and sweet finish, this blend is a showcase of what the arabica coffee bean can offer.
When brewed, 100% arabica boasts a chocolatey and nutty, but yet slightly acidic flavour. This is characteristic of the South American soil and lighter roast profile that compliments the roasters vision.

Mocha Brazil
A versatile, well balanced roasted blend of arabica beans from South America and East Africa. Mocha Brazil showcases a delicate combination of flavours to achieve a wonderful final result.
When brewed, look to find a nutty, malty body with a bittersweet finish present in a thick golden crema layered on top a dark cocoa heart. As a medium roast, Mocha Brazil can be used for a variety of espresso based drinks.

Italian Blend
Hearty, full-bodied, and rich chocolatey flavour. the Italian blend is a mix between 50% Ethiopian arabica and 50% Vietnamese Robusta. The longer roast profile allows bold flavours of the blend to fully develop resulting in an espresso fitting for the Italian palette. Strong and bold.
When brewed, expect a warm, silky mouthfeel with a powerful liquorice finish. Ideal for espresso based drinks both short and long alike.
